Dzik, As In Dang Good
A successful hunting season filled our freezer with the most tremendous venison I’ve ever seen, and some beautiful elk shanks from a generous butcher.
As I’ve mentioned, when it comes to venison - Hank Shaw sure knows his stuff. I trust any of his recipe, and now can vouch for his Dzik, Yucatan Venison recipe.
