Fathead Pizza Crust Chronicles : Curry

This dough is made once a week in my house, and over time have developed my own spin on a recipe. This pizza is the reason I’m able to stick with the keto diet - because I don’t feel deprived on pizza night!

Here’s my perfected recipe:

-1 1/2 cups shredded mozzarella cheese

-3/4 cup almond flour

-2 ounces cream cheese

-1 egg, beaten

-1/2 tablespoon italian seasoning

-1/2 teaspoon garlic powder

-sometimes nutritional yeast depending on the toppings

Preheat oven 425.

In a microwave safe bowl - combine mozzarella, flour, and cream cheese. Microwave 1 minute, stir to combine and microwave 30 seconds more.

Add in beaten egg, italian seasoning, garlic powder, and nutritional yeast (if using) and stir to fully combine.

Place dough on parchment paper and roll into desired shape - about 1/8” - move parchment with dough onto sheet pan.

With a fork, prick holes all over dough (it will rise!) and cook for about 8 minutes.

Remove from oven, and place desired toppings: cheese, veggies, etc. and return to oven for 5-10 minutes or until melted!
