This weeks topic: how to make a juicy chicken breast without the use of a grill! My answer: BRINE. BUTTER. RUB. REST! Follow these steps to make juicy, tender chicken breast every time!

What You’ll Need:

-2 large chicken breast

-1 quart water - that’s 4 cups

-1/4 cup salt

-melted butter

-favorite rub mixture - I use a homemade mix of pepper, garlic powder, onion powder, and paprika

Method:

For Brine -

Slowly dissolve salt in water over medium heat, and let cool to luke warm. Pour over chicken breasts, cover, and refrigerate 15 minutes up to 45 minutes. Try not to brine over an hour as it can make the chicken sticky or chewy in areas.

For Chicken -

Preheat oven to 450

Remove chicken, rinse under cold water and pat dry.

Brush on melted butter to both sides of chicken.

Sprinkle favorite rub mixture on both sides of chicken. *Note: Because we brined the chicken, it’s best to use a mixture that does not contain salt. It may be too salty if you add salt here, or a spice mix containing salt.

Roast, uncovered for 15-18 minutes or until chicken is cooked through - using a thermometer to be sure (we want chicken at least 165).

Remove from oven, cover with foil and let rest for 5-10 minutes. Don’t skip this step :)

Slice and serve, or store in fridge for meal options all week!
