Insta-Chicken Ramen
Mix and match with whatever veggies or protein you have on hand - there’s no wrong way:)
-6 cups chicken stock or broth
-2 tablespoons soy sauce
-1 tablespoon fish sauce
-1 1/2 tablespoons minced ginger
-1 1/2 tablespoons minced garlic
-3 pack millet + brown rice ramen (i’m using lotus foods) - if you’re using top ramen packets, maybe use 2
-2 tablespoons lime juice
-1 bunch bok choy - this was on the smaller side
-1/2 bunch cilantro - chopped
-1/2 bunch green onions (white ends too!) - chopped
Combine chicken, broth, soy sauce, fish sauce, ginger, garlic in bowl of insta pot- cover and pressure cook for 10 minutes.
-quick release steam
-set insta pot to saute - shred chicken. Stir in noodles, lime juice, cilantro, green onions, and wok chow - cook for about 5 minutes
-serve with extra green onions, chile oil, and boiled eggs
