Lemon Herb Chicken.. In the Crockpot!

Sometimes. You. Just. Need. Easy.

-5-6 boneless, skinless chicken thighs - feel free to use breasts if that’s what you’ve got!

-1/2 tablespoon garlic powder

-1/2 tablespoon onion powder

-1/2 tablespoon chili flakes

-1/2 tablespoon smoked paprika - or regular!

-1/2 tablespoon italian seasoning

-1 tablespoon dried parsley

-zest of 2 lemons

-3 large garlic cloves - chopped small

-juice of 2 lemons

-1 cup chicken stock

-4 tablespoons butter

-salt and pepper to taste

Place everything into slow cooker, mix to combine, cover and cook on high for 4 hours or low for 7 hours, stirring every once and while. I kept the chicken in larger pieces, but this would be delicious shredded up for pasta, couscous, etc!
