The Whole {Homemade} Enchilada (Sauce)

Need something to pair with those pickled onions? You gotta get on the ‘make your own enchilada sauce’ train! Super easy, and free of unnecessary processed stuff - win! 

-3 tablespoons olive oil

-2 tablespoons flour

-1/4 cup chili powder

-1/2 tablespoon oregano (I use whole)

-1/2 tablespoon smoked paprika (regular paprika is fine)

-1 tablespoon cumin

-2 cups beef stock

-2 cups tomato sauce

-2 garlic cloves - minced

-salt to taste

-Mix oil, flour, chili powder, oregano, paprika, and cumin on low heat until bubbles appear

-Add in beef broth, tomato sauce, garlic and salt - bring to a boil then cover and simmer for 20 minutes stirring occasionally

Makes about 2.5 cups. Store in the fridge for about a week or freeze!
