Get Your Onion Goggles Out

O-N-I-O-N-S Love em’ or hate em’, onions are packed full of valuable nutritional elements! These little bulbs have proven to help reduce cancer, maintain hair and skin health, and improve mood! One cup of chopped onions provides at least 13% of an adults recommended daily intake of vitamin C.

Pickled Red Onions - my go-to all-purpose condiment:

-1 red onion

-1/2 cup lime juice

-1/2 cup water

-1 tablespoon sugar

-1 1/2 teaspoons salt

-1 teaspoon oregano

Slice red onion thin (mandolin works great!), place into mason jar (or bowl). Whisk liquids, sugar, salt, and oregano. Pour mixture over onions. Let sit at room temperature for 30 minutes. Refrigerate. Keep 2 weeks in sealed container.

Featuring oregano and lime - I use these to top tacos, enchiladas, beans, tamales, nachos, etc. Just replace the lime juice with apple cider vinegar and remove the oregano for a more traditional pickled onion that would beautifully compliment a cheese board, sandwich, steak, or kale salad!
