Bottom Line: BRINE

Huge fan of brining pork chops! Brining breaks down some of the muscle tissue and helps the protein draw in moisture, improving the tenderness and flavor of the meat. Even a quick 30 minute brine makes all the difference!

Needed a small break from carbs so here’s an easy weeknight dinner of (brined) grilled Pork Chops, Cinnamon Carrots, and Green Beans:

Pork Chops:

2 Chops from Costco :)

1 cup water

2.5 tablespoons salt

2 cups apple juice

Brine 2-24 hours

Grill, roast, or pan fry - just get to an internal temp of 145 F followed by a 3-4 minute rest

Carrots:

Preheat oven to 350

5 carrots peeled and cut on bias

2 tablespoons brown sugar

1/2 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon cinnamon

2 tablespoons unsalted butter

Roast 25-30 minutes (the cinnamon will make carrots appear burnt, don’t fear!)

Serve with green beans and your favorite mustard!
