Pho Real
Insta Pot Pho. It’s all about the toppings
What You’ll Need:
-olive oil
-1 yellow onion, quartered
-1 tablespoon minced ginger
-3 cloves minced garlic
-4 whole cloves
-3 star anise pods
-2 cinnamon sticks
-1 teaspoon ground coriander
-1 teaspoon ground cardamom
-1 teaspoon whole black peppercorns
-2 large boneless skinless chicken breasts or 4 small boneless skinless chicken thighs
-1 quart stock
-2 cups water
-3 tablespoons fish sauce
-1 1/2 teaspoons brown sugar
-salt and pepper to taste
-rice noodles, ramen, or veggie noodles
-toppings: basil, mint, bean sprouts, jalapeno, lime wedges, sriracha, hoisin sauce, chili sauce, whatever else you may enjoy!
Method:
-Set insta pot to saute and swirl olive oil, let heat.
-Add onion, ginger, garlic, and cook until slightly browned - maybe 5 minutes.
-Stir cloves, star anise, cinnamon, coriander, cardamom, and peppercorns until they are mixed thoroughly.
-Add stock, water, fish sauce, brown sugar, and stir to combine.
-Set pressure time to 15 minutes - quick release when done.
-Remove chicken from pressure cooker and shred in a separate bowl, set aside.
-Strain your broth through a fine sieve and discard all collected solids.
-Taste broth, season with salt and pepper.
-Cook noodles according to package, drain.
-Build dish by dividing noodles and chicken into bowls and labeling broth over top -serve with favorite toppings!
