The Picnic Staple
Bread + Butter Pickles
The picnic staple. Anyone else home with a toddler and finding themselves on many a picnic?
Just me? Well, these little pickles are the perfect pick me up while playing in the park!
It also helps that I have very generous neighbors with bountiful gardens!
What You’ll Need:
-1 pound cucumbers, thinly sliced (if you still need a mandoline, here’s a great one!)
-1/2 yellow onion, thinly sliced
-1 cup apple cider vinegar
-1/4 cup water
-3/4 cup sugar
-1 tablespoon salt
-1 teaspoon country dijon mustard
-1/2 teaspoon turmeric
-1 teaspoon mustard seeds
Method:
Place cucumbers and onions in 2 pint sized jars.
Bring vinegar, water, sugar, salt, mustard, turmeric, and mustard seeds to a boil over medium heat and whisk until sugar and salt dissolve. Let cool to warm.
Pour brine over cucumbers and refrigerate at least 2 days to marry flavors.
Keep in the fridge for two months!
