Turkey Pot Pie

Homemade Turkey Pot Pie using brined, roasted turkey and stock from scratch!

-1 pie crust - let me know if you want my pie crust recipe

-1/2 stick butter

-1/2 cup celery

-1/2 cup yellow onion

-1/2 cup diced and peeled carrot

-1 tablespoon minced garlic

-2 1/2 cups light and dark cooked turkey meat - shredded

-1/4 cup flour

-2 1/2 cups homemade turkey stock (make your own ya’ll! Or, use chicken stock here).

-3/4 cup heavy cream

-3 tablespoons sour cream

-1/2 cup to 1 cup frozen peas (depends if you’re a pea lover)

-2 tablespoons chopped fresh thyme

-salt and pepper to taste - don’t be shy!

Preheat oven to 400. 

Melt butter in skillet - add celery, onion, and carrot and cook until translucent. Mix in garlic and turkey stirring so garlic doesn’t burn. Sprinkle flour, stir to incorporate, and cook for a few minutes. Add in stock and heavy cream, stirring as you add. Bring to boil and let mix thicken for a few minutes - add in sour cream and mix - let thicken 1 minute more. Add frozen peas, thyme, and salt and pepper (don’t be shy with that salt people!) 

Pour mix into casserole or pie tin.

Roll out crust on top of mix and press into sides of dish or tin. Cut small vent design on top of crust.

Bake for 35-40 minutes or until crust is bubbly and golden-delish! Let cool slightly before digging in
