Cucumber to Pickled
Quick pickled cucumber, carrot, and onion! Great for sandwiches, spicy Korean wings, or really..anything!
-1 large cucumber
-1 large carrot
-quarter of an onion (preferably red)
-1/2 cup water
-1/2 cup white vinegar
-3/4 cup sugar
-1 teaspoon salt
-1 teaspoon chili flakes
-1 teaspoon black peppercorns
Heat water, vinegar, sugar, and salt in saucepan until sugar and salt are dissolved - let cool slightly.
Mandoline or thinly slice cucumbers, carrots, and onions.
Combine vegetables with liquid mixture, peppercorns, and chili flakes - chill
Keep for a week
