It's a Sauce, It's a Dressing, It... Has Peas?

@platesandplaydates created a super cool minty pea hummus that I thought would be amazing as a salad dressing. She gave me the OK to try, and I came up with a slightly different version that was delicious! In the video, I combine the dressing with a salad of kale and arugula, strawberries, goat cheese, almonds, and cucumbers. I also jarred it up and brought it to a friends house for dinner where we enjoyed it further as a sauce for shrimp and veggies - delish! It’s minty, it’s slightly sweet from the peas, and the combination of other ingredients leaves you with a flavor punch! 

What You’ll Need:

-1/3 cup almond butter

-1/4 cup tahini

-1/2 cup mint

-2 cups peas - ok if they are frozen!

-1 tablespoon fresh chives

-zest of 1 lemon and 1 lime

-2 tablespoons lemon juice

-1 tablespoon lime juice

-1 garlic clove, minced

-3 tablespoons water

-salt and pepper to taste - I used 1/2 teaspoon of each

-1/2 cup olive oil

Method:

  1. Combine all ingredients in blender or food processor until pureed well, scraping down edges once.

  2. With blender or processor running on low, slowly add olive oil to help emulsify.

  3. Taste for seasoning and add as needed

  4. Bottle or jar and keep covered in refrigerator for about 5 days - need some dressing bottles?
