Kickin' Citrus Kohlrabi Slaw

Sometimes called a cabbage turnip, kohlrabi is in the same family as broccoli, cabbage, and cauliflower! It’s a super versatile veggie that can be prepared many different ways. Slice, dice, shred, saute or even roast - think raw cabbage, but with the kick of a radish! 

One of my favorite ways to prepare kohlrabi is in a slaw. Ya’ll know I love my slaws! This one uses a fun dressing featuring jalapeños and citrus. While I used 3 different greens/veggies to make my slaw, you can pick whatever you like! Check out my instagram highlights for step by steps.

Slaw:

-10-12 ounce mixture of ‘slaw’ fixins… I used cabbage, kohlrabi, raddichio, and a little kale

-1 medium carrot - grated

-1/4 red onion - sliced thin

Kickin’ Citrus Vinaigrette:

-1/4 cup lime juice

-1/4 cup orange juice

-2 tablespoons apple cider vinegar

-2 tablespoons honey

-2 jalapeños - seeded and minced

-2-3 tablespoons loose cilantro leaves

-1/4 teaspoon salt

-1/2 cup olive oil

Combine slaw mixture, carrot, and red onion - set aside while you make the dressing.

Blend everything but the oil really well to make sure the jalapeños get broken down. You may need to turn your blender to high to achieve this. 

With the blender running on low, slowly add olive oil in a steady small stream to emulsify and add body to dressing.

Pour dressing over slaw mix, stir to combine, cover and refrigerate at least 10 minutes before serving!
