Get Your Appetizer Platter!

Bursted Tomato Bruschetta

Delicious appetizer to enjoy with your bounty of tomatoes! Balsamic vinegar gives a velvety tartness that takes tomatoes to a whole new level of yum!

-10-12 oz cherry tomatoes

-2 tablespoons olive oil

-2 tablespoons balsamic vinegar

-salt and pepper to taste

-3-4 sprigs of fresh thyme

-fresh mozzarella cheese

-fresh basil

-12-15 pieces good bread, depending on size

-garlic clove

-more olive oil for bread

-kosher salt for bread

-Preheat oven to 350.

-In a baking dish combine tomatoes, olive oil, balsamic, and salt and pepper - nestle sprigs of thyme on top. 

-Roast tomatoes uncovered for about 15-20 minutes, just until they start bursting!

-Take tomatoes out and set aside *you can make this ahead, the chilled tomatoes are amazing!

-Move oven temp to 375. Slice garlic clove in half. Cut bread into desired size, and rub both sides of bread with garlic clove. Drizzle or brush both sides with olive oil, and a small sprinkling of salt. Organize on sheet tray lined with foil and bake for 5 minutes per side.

-While bread is toasting, cut mozzarella into slices that will fit on bread (you only need as many slices of cheese as you have bread!

-As soon as you remove the toasted bread from the oven, top with sliced mozzarella and return to oven for 2-4 more minutes until cheese starts to melt. 

-Arrange melty cheese toasts onto serving platter and top with tomato mixture - garnish with fresh basil
