Ok, ok I know - not funny Coronavirus.
I think I’ll call this series the ‘Rona Recipes’. TBH, this is not how I envisioned posting my very first Extra Apron recipe. I think we’re all learning and experiencing new things right about now - family pokemon yoga, homeschooling, new coworkers that also snore, etc. But our collective health is so important and we will absolutely rebuild from this. It will take some time, but we’ll get there by supporting one another.
With that said, I’d like to share my own quarantine meals that I’ve deemed ‘Rona Recipes’. No exciting lighting or fancy tripod, no crazy ingredients or techniques - just hoping to spark inspiration by sharing my own ideas during lockdown. My husband and I went to the store once and I have challenged myself to utilize only the items we have in the house. Definitely let me know if you have questions or want suggestions for ingredients you have in your stock pile!
Veggie Brown Rice Soup
3 cups frozen vegetables - I used the Costco Stir Fry frozen veggies (brocolli, red pepper, onion, mushroom, green bean, water chestnut)
2 teaspoon dried basil
2 teaspoon dried oregano
2 teaspoon paprika or spanish paprika
15 oz can diced tomato w/ juices
4 cups vegetable or chicken stock
3 cups water
1 cup brown or wild rice
1 teaspoon salt
1 teaspoon pepper
1 14 oz can corn or about 1 1/2 cup frozen corn
Roughly 2 cups of frozen or fresh spinach - if fresh, chop
15 oz can beans - I used cannellini beans but black or kidney would be great!
Add everything but the corn, spinach, and beans to your crockpot
Cover and cook on high for 4 hours or low for 7-8 - until rice is tender
Add corn, spinach, and beans - allow to cook until spinach has wilted
Add salt or pepper to taste
