Wannabe Chipotle Sofritas

Chipotle has this amazing meat free option called Sofritas that is basically shredded tofu marinated in a spicy sauce of chipotle chilies, poblanos, and spices. I order it every time we have Chipotle… and it was time I made my own version:

-1 package firm tofu

-olive oil

-1 medium poblano - charred, skin and seeds removed, then chopped 

-1/2 red onion

-2 cloves garlic

-1 canned chipotle pepper + 1 tablespoon sauce from can

-3 tablespoons tomato paste

-2 teaspoons cumin

-1 teaspoon dried oregano

-1 teaspoon salt

-18 oz can tomato sauce

-1/2 cup carrot juice (I have this for smoothies.. if you don’t, use water)

makes about 3 cups of sauce, which I personally use all 3 cups for tofu

-dry your tofu: take out of package, wrap a paper towel around block and let sit for 15-20 minutes while you make the sauce

sauce:

-char, skin, and seed your poblano - chop roughly, add to blender. (comment below if you’d like to see a video on charring and deseeding peppers!)

-grill or use your burner to char onion, add to blender

-add garlic, chipotle pepper + sauce, tomato paste, cumin, oregano, salt, tomato sauce, and carrot juice or water to blender - blend until smooth and combined

-heat pan over medium heat, swirl olive oil and add tofu - let brown slightly 

-add in sauce and bring to a small simmer, reduce heat to medium-low and let cook about 5 minutes to incorporate flavors and bring to temp.

-taste for salt, add if needed

-serve with rice, beans, corn, pico, avocado, cheese, sour cream, jalapenos, onions, cilantro, anything you fancy!

-If your not on the tofu train, this sauce would be excellent with shredded chicken, steak, or pork!
