Mediterranean Mahi Mahi

Every once in a while I question whether cheese goes with fish - then I make it and the argument is squashed. I have an abundance of feta and mahi mahi (all from Costco) and challenged myself to combine the two.. here’s what I came up with:

-2 mahi mahi filets

-lemon juice

-salt and pepper

-2 tablespoons butter

-1 small yellow onion - chopped

-1/2 cup white wine

-1 can diced tomatoes with basil, garlic, and oregano - I also threw in a few cherry tomatoes 

-3 tablespoons capers (drained)

-2-3 cups fresh spinach

-chili flakes

-1/2 cup kalamata and green olives

-feta

-orzo

-chopped parsley

-Season fish with salt, pepper, and lemon juice - let sit while you mise en place

-Preheat oven to 375

-Melt butter over medium heat in large pan - add onions, salt and pepper and saute 3-5 minutes or until translucent

-Pour wine, and stir 

-Add in fresh tomatoes (if you have em’), canned tomatoes, capers, and olives - stir

-Add chili flakes

-Taste and add salt and pepper if needed - add in spinach and cook until just wilted

-Pour tomato mixture over fish and bake for 18-20 minutes or until fish is cooked through

-Cook orzo, strain, return to pan, add a swirl of olive oil, salt and pepper to taste, and feta cheese (just however much you like!)

-Serve fish over orzo, top everything with parsley
