Under the Tuscan Salmon

-12 ounces salmon - we buy from Costco, portion, and freeze

-1 tablespoon butter

-1 small yellow onion - chopped

-4 cloves garlic minced

-1/3 cup sun-dried tomatoes - chopped

-1/4 cup chicken stock

-1 cup heavy cream

-1/2 cup freshly grated parmesan cheese

-2 cups fresh spinach

-1 can cannellini beans

-salt and pepper to taste

Season salmon with salt and pepper - sear on both sides over high heat - remove from pan.

Move heat to medium - melt butter. 

Add onion, season with salt and pepper - cook until onions start to become translucent. 

Add garlic, stir to combine. Cook 3-5 minutes. 

Add sun-dried tomatoes, stir to combine - cook down another 3-5 minutes.

Stir in chicken stock and heavy cream - completely combine ingredients.

Mix in parmesan cheese and spinach - stir and let cook 3 minutes or until spinach has wilted.

Add beans - taste and add salt and pepper as needed.

Return salmon to pan - serve.
